Cheese Bites

220gm plain flour
200 gm cheese grated – parmesan or a crumbly blue
200 gm unsalted butter
½ tsp cayenne pepper
1 tsp fine salt
1tsp black pepper
1 ½ tbsp. sesame seeds
1 ½ tbsp. nigella seeds

Cheese Bites   I use a food processor, put all ingredients except the seeds into the processor and mix the mixture well.  Add the seeds and continue processing until you get a lump of dough. Divide the dough into three of four.  Make a sausage shape from each portion, about 3-4 cm in diameter.  Wrap in cling film and leave in freidge for at least an hour, until firm.

Cut into 5mm slices, place a small distance apart on baking trays.  Bake in a 180º oven (170º fan) for about 17=20 mins – do not undercook.
