1/2 cup finely chopped carrot (1 medium)
1/3 cup chopped onion (1 small)
1 clove garlic, minced
1 14 1/2 -ounce can diced tomatoes
1 cup water
1 6-ounce can tomato paste
1/2 cup diced fully cooked ham or crumbled, crisp-cooked bacon
2 teaspoons sugar
2 teaspoons dried italian seasoning, crushed
1/4 teaspoon pepper
1/2 of a 27 1/2 - or 30-ounce package frozen cheese-filled ravioli or one 15 or 16-ounce package frozen cheese-filled tortellini
1 cup shredded mozzarella cheese (4 ounces)

For meat sauce, in a large skillet cook ground meat, carrot, onion, and garlic till meat is brown and onion is tender. Drain fat.

Stir in undrained tomatoes, water, tomato paste, ham or bacon, sugar, Italian seasoning, and pepper, Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes, stirring occasionally.

Spoon one-third of the meat sauce into a 2-quart square baking dish. Arrange frozen ravioli or tortellini atop the meat sauce. Sprinkle with 1/2 cup of the mozzarella cheese. Top with the remaining meat. Sauce.

Bake, covered, in a 350° oven for 40 to 45 minutes or till pasta is tender. Uncover and sprinkle with remaining mozzarella cheese. Bake about 5 minutes more or till cheese melts.

Makes 6 main-dish servings.

Note: If desired, reduce the water to 3/4 cup and add 1/4 cup dry red wine to sauce.
