Cheese sauce

My mum taught me how to make this when I was quite young and it's such a good thing to have in your repertoire. I've taught it to lots of my friends and it makes a great sauce for macaroni cheese or tuna pasta bake, both of which I have posted recipes for.


plain flour
cheddar cheese
english mustard
salt and pepper

  1. Melt about a tablespoon of butter in a saucepan. Keeping the pan on a low heat, gradually add flour until the mixture forms a smooth dough-like ball. Then start to add milk until it reaches a saucy consistency - if you're not sure, better to make it thinner than you think as the cheese will thicken it up.
  2. Grate in the cheese and stir it in. This part is pretty much up to you - keep tasting and adding more cheese if you think it needs it, I tend to use about 1/3 of a block. You can also add pretty much any other type of cheese if you want. Then add a large tsp of mustard (again, put in more or less depending on personal taste). Season, and your sauce is done.
