Ingredients: 

¼ pound extra-sharp Cheddar, coarsely grated (about 1 ½ cups) (or other firm, flavorful cheese)

1 cup unbleached all-purpose flour

6 Tablespoons unsalted butter, cold, cut into 1” pieces

½ teaspoon kosher salt

1/8 teaspoon cayenne (or other complimentary spices)

¾ teaspoon ground black pepper

1 ½ Tablespoons whole milk
