3/4 cup uncooked regular long-grain white rice
1/2 teaspoon onion powder
1/4 teaspoon ground black pepper
2 cups frozen mixed vegetables
1 1/4 pounds skinless, boneless chicken breast halves OR can of shredded chicken
1/2 cup shredded Cheddar cheese (about 2 ounces)
Mix all ingredients and bake at 350 for 40-50 minutes.
