½ cup toasted quinoa flour
1 teaspoon baking powder
½ teaspoon salt
¾ cup coconut palm sugar
¼ cup applesauce
¼ cup melted and slightly cooled coconut oil (or organic canola)
2 tablespoons almond milk or milk of choice
2 flax eggs OR 2 eggs
¾ cup cooked quinoa
1 cup granola
½ cup dried cranberries, cherries or apricots
½ cup flaked coconut
