Chick & Noodle Soup


1 tbsp olive oil
1 cup diced carrot
1 cup diced zucchini
1/2 cup minced onion
1/2 tsp kosher salt
pinch of thyme
1 cup frozen corn
1-15 ounce can garbanzo beans , rinsed and drained
2 quarts (8 cups) vegetable broth
1 cup small pasta (rings, mini shells, orzo, macaroni, etc)
nutritional yeast, salt, and pepper to taste
