Chicken and Carrot Stir Fry with Cauliflower Rice

Ingredients: 

1 lg head of cauliflower, trimmed into florets
2T vegetable oil
1/4 tsp toasted sesame oil
1/4 tsp salt
1-1/4 lb chicken breasts, cut into strips
8 garlic cloves, peeled and lightly smashed
1/4 c ginger
pinch of crushed red pepper flakes
3/4 lb carrots (about 4), sliced thinly on the diagonal
2 scallions
3 T white wine
3 T soy sauce
1 tsp sugar
1/4 tsp pepper
1/2 c roasted cashews
