Chicken and Long Grain Wild Rice

Ingredients: 

8 Packets of No Sodium Chicken Broth
8 cups water
1.5lbs chicken breast tenders or chicken breast finely cubed
1 large Vidalia onion
1 tablespoon Extra Virgin Olive Oil
4 Large Carrots chopped
5 stalks of celery chopped
1 bunch of spring onions chopped
seasoned salt to taste (No MSG)
pinch of bay leaves
2 tablespoons of parsley
salt
pepper
1 teaspoon poultry seasoning
1/2 cup of whole grain wild rice


Directions

  1. chop onion and start sauteing in a large crock with the extra  virgin olive oil
  2. as this is cooking add chicken to the crock with salt pepper and poultry seasoning, and cook chicken and onions over a high heat, browning meat until onions are starting to go clear
  3. add 8 cups of hot water mixed with broth packets
  4. chop the remaining veggies and add one at a time
  5. season with seasoned salt, parsley, bay leaves
  6. simmer on a low heat for several hours or until desired.
  7. during last hour to hour and a half add wild rice. Soup is ready when the rice "blossums"

Tips / Substitutes: Makes a yummy winter treat with a nice loaf of bakery bread
