The bundles can be refrigerated for up to 24 hours, or wrapped tightly and frozen for up to 1 month. If frozen (do not thaw) increase the baking time to 50-55 minutes.

Ingredients: 

Herb butter:
4 tbsp (1/2 stick) unsalted butter, softened
1 small shallot, minced (about 1 tbsp)
1 tbsp chopped fresh parsley
2 tsp juice from 1 lemon
1/2 tsp chopped fresh tarragon or 1/8 tsp dried
salt & pepper to taste

Chicken:
3 slices high-quality white sandwich bread, torn into pieces (or breadcrumbs)
1 tbsp veggie oil
salt & pepper to taste
2 (7- to 8-oz) boneless, skinless chicken breasts, trimmed
1/2 cup unbleached all-purpose flour
2 large eggs, lightly beaten
1 tsp Dijon mustard (optional)
