Chicken Pot Pie

1/3 cup unsalted butter
1/3 cup flour
1 1/2 cups chicken broth
2/3 cups milk
1 tsp salt
1/2 tsp ground black pepper
1/2 tsp garlic & herb seasoning
1/2 tsp garlic powder
1/2 tsbp onion powder
1/4 tsp basil
1 Tbsp oregano
dash thyme
dash parsley
2 cups cooked, shredded chicken
1/2 bag frozen veggies
2 large potatoes, cut into 1/2 inch pieces

2 cups flour
2 1/2 tsp baking powder
1 1/2 tsp salt
1/2 tsp black pepper
1 Tbsp oregano
5 tbsp margarine
1/2 cup milk

  1. Butter a 2-qt casserole dish. In a large saucepan, saute butter - stir in flour, cooking 1 min. Add chicken broth and milk gradually. Season with salt & pepper. Heat to boiling, stirring constantly. 
  2. Add frozen veggies, chicken, and remaining seasonings. Cook 2 minutes.
  3. In a medium bowl, mix together flour, baking powder, and seasonings. Cut in margarine until mixture is crumbly - very important! Add in milk a little at a time, don't stir or beat. Fold in with fork & use hands. Form into a crust.
  4. Transfer filling to casserole dish, and top with crust. Bake for 12-15 minutes, or until topping is golden brown and cooked on the bottom, and filling is bubbling.
