Chicken Risotto

Ingredients: 

1 Litre vegetable stock
2 T olive oil
1 large onion - diced
2 cloves garlic - diced
400g arborio (risotto) rice
1 glass of white wine
70g butter
1/2 cup grated parmesan cheese
1 chicken breast - cut into cubes and cooked.
1 zest and juice of 1 lemon
1T fresh thyme - chopped
1/2 cup fresh parsley - chopped
