Chicken, Sausage and Shrimp Jambalaya

1 T black pepper
1 T onion powder
1 T cayenne pepper
1 T dried leaf oregano
1 T dried thyme
Instead of 3 T Creole Seasoning.


4 T butter
1 T vegetable oil
2 skinless, boneless chicken breasts, cubed
1 lb andouille sausage, sliced
2 ribs celery, chopped
1 medium yellow onion, chopped
1 green bell pepper, chopped
3 cloves garlic, minced
28 oz can crushed tomatoes
3 C chicken stock
3 T Creole seasoning
2 bay leaves
1 T hot sauce
2½ C long grain rice
16 oz medium shrimp, deveined and shelled
1 C frozen okra
Kosher salt to taste
2-3 green onions, chopped
