THIS IS A QUICK, EASY, DELICIOUS baked chicken dish that becomes intensely flavorful in the oven. There are only a few ingredients, but they meld into a vibrant whole. The chicken is baked until it is tangy and melting off the bone, with a pile of tender ginger rice below it and plenty of sauce to pour over it all. • Serves 4


4 pounds bone-in chicken thighs
Salt and freshly ground black pepper
¾ cup white rice
One 2-inch piece fresh ginger, peeled and grated
2 cloves garlic, minced, or 2 teaspoons garlic paste
1 cup dry white wine
1 cup low-sodium chicken broth
¼ cup balsamic vinegar
2 teaspoons ground ginger
½ cup grated Parmesan cheese
