Chickpea Flatbread (Socca)

Makes about 3 thin flatbread pancakes.


1 cup chickpea flour
1 cup plus 2 T water
3/4 tsp. sea salt
1/4 tsp. ground cumin (David used 1/8 tsp.)
1 1/2 T olive oil (plus more for brushing griddle and drizzling over finished Socca)
