Chickpea, Potato & Pea Curry

1 onion (or a leek or shallots), diced
2-3 potatoes (leave skin on), diced 1-2cm (or a large Kumara, or 2 cups diced pumpkin)
1 Tbsp curry powder
1 can chickpeas (or lentils or beans), drained
1 can crushed or chopped tomatoes
A good pinch of chilli flakes (optional, if you want a bit of heat)
1-2 cups frozen peas (or green beans, or whatever other frozen veg, or canned or fresh veg you have
½ cup coconut cream or milk, cream or cashew cream (optional)
Chopped coriander, to serve (optional)
