Chili and Garlic Beef with pak choi

this was a bit too spicy for the kids but delicious for the grown ups


1 medium hot chili pepper
1/2" knob ginger
4 cloves garlic, chopped
1 tbsp vegetable oil
1 tbsp soy sauce
1 tbsp chili sauce (sriracha works well)
1/2 tsp brown sugar

Stir Fry
350-500g stir fry beef
1/3 head pac choi, cut into 1/2" pieces
1 large carrot, sliced thinly
1 cup snow peas, optional
1 cup mushrooms, optional
(can add/substitute other stir fry vegetables)
splash of cooking sherry (or white wine would probably be great too)

  1. prepare marinade by mixing all marinade ingredients in a ziploc bag or shallow dish, add stir fry meat strips, refrigerate for a few hours or up to 1 day
  2. cook rice
  3. heat some oil in wok
  4. add marinated meat (including marinade), cook over medium-high heat for 2 mins
  5. add a splash of sherry, then add carrots and pac choi stems (and any other larger vegetables), stir fry 2 mins
  6. add snow peas, pac choi leaves, mushrooms (and any other more delicate vegetables, stir fry 1-2 mins
  7. add salt/pepper to taste
  8. serve over rice
