Chilled Peach Tomato Bisque

1 Medium Vidalia Onion, Chopped
2 Tbsp. Unsalted Butter
2 Large Peaches, Peeled and Chopped (about 3/4 lbs)
4 Large Tomatoes Chopped (about 2 lbs)
1/3 Cup Creme Fraiche or Sour Cream
Salt and Pepper, to taste
Basil (as garnish)

1. Saute chopped onion in butter until translucent. Stir in peaches and tomatoes, and simmer over low heat, 10 minutes. 2. Puree the peach tomato mixture with creme fraiche or sour cream (I used my immersion blender, right in the pot). Season with salt and pepper, to taste. 3. Chill (at least an hour). Serve garnished with a flourish of basil. From YummyBites blog.
