Chocolate Custard Muffins

I made this last night and am very happy with the results. Recipe is taken from Dan Lepard's excellent baking series at

Keep an eye on the pan when heating up the custard!

The recipe feels like it could come apart when adding the oil and first egg but keep beating and it becomes beautifully smooth.

Next time I will add some chocolate chunks.


50g cornflour
3 level tbsp cocoa
100g dark soft brown sugar
225ml cold water
75g unsalted butter, cubed
125g dark chocolate, broken small
75ml sunflower oil
2 tsp vanilla extract
2 large eggs
125g caster sugar
125g plain flour
2½ tsp baking powder
