Ingredients: 

1 stick (1/2 cup) unsalted butter plus additional for greasing pan
1 cup hazelnuts (5 oz)
6oz fine-quality bittersweet chocolate (not unsweetened; not more than 60% cacao)
2 tablespoons potato starch
1/4 teaspoonsalt
1/2 cup sugar
4 large eggs, separated, at room temperature for 30 minutes
1 teaspoon vanilla
