Citrus Vinaigrette recipe

Good with asparagus, green beans, spinach, and probably many other vegetables that taste good with a little citrus.
Yield: 4


2 tBsp fresh lemon juice; (approx. juice of 1 lemon)
1/4 cup fresh lime juice; (approx. juice of 3 limes)
3 tBsp frozen orange juice concentrate
1 1/2 tsp red wine vinegar
1 clove garlic, minced or pressed
1/4 teaspoon xylitol
1/2 teaspoon salt
black pepper, to taste
1/2 cup olive oil

Place all ingredients in a jar with a tight-fitting lid and shake vigorously. Let stand 30 minutes before using to blend the flavors.
