Classic BLT

I like swapping the iceberg lettuce for baby spinach leaves, and adding sliced cheddar cheese and spanish onion.

Swap for fake bacon to make this recipe vegetarian.

Makes 4 serves


250g lean bacon, rind removed
2 teaspoons Dijon mustard
8 slices toasted bread
175g iceberg lettuce, shredded
2 large tomatoes, sliced
1 large avocado, sliced

2 eggs
1 tbsp white vinegar
1 tsp dijon mustard
100ml vegetable oil, salt and pepper.

  1. Cool bacon on grill or under salamander until crispy. Set aside on paper towel to drain
  2. make mayonnaise by whisking together eggs, vinegar, mustard, salt and pepper then gradually drizzling in oil til mix emulsifies.
  3. Spread toast slices with mayonnaise, then dijon
  4. Top with lettuce, then tomato, avocado and finally bacon.
  5. Secure corners with toothpicks to serve.
