1/4 cup arrowroot starch
3/4 cup hazelnut flour/meal (almond meal would work)
2 tbsp cocoa
1/3 cup coconut sugar
1 tsp vanilla extract
1/4 cup coconut oil, liquid
Fill with Sweet Potato Butter*
2 sweet potatoes, peeled, cooked
1/2 cup coconut butter (NOT coconut oil)
3/4 tsp cinnamon
few drops of stevia if you desire sweetness
*you could use any ice cream of choice, that would work as well to make cookie sandwiches.
