olive oil for searing
1 can tomato paste
1 can coconut milk
Spice mix: tandori masala, cumin, tumeric, cayenne, paprika, salt, pepper
Combine spice mix as desired
Coat cauliflower in olive oil and toss in spice mix. Set aside to sit for 10 minutes to marinate.
In a wok or cooking pan, combine cocunut milk, tomato paste, and remaining spice mix. Bring to a boil, reduce heat, and simmer for 10 minutes until sauce reduces.
After 10 minutes, add cauliflower to mixture, and continue simmering for another 10 minutes.
Serve with basmati rice and fresh cilantro garnish
