Coconut Carob Bars


1/2 c coconut oil, melted
1/2 c carob powder
1/4 c protein powder
1 pinch ground cinnamon
1/4 c water
1 tsp vanilla extract
1/2 c shredded coconut

  1. Place the coconut oil, carob powder, hemp protein powder and cinnamon into a food processor and blend to combine. Add the water and vanilla extract and process until a smooth consistency has formed.
  2. Scoop the mixture into a mixing bowl, add the shredded coconut and stir to combine.
  3. Scoop the mixture onto a sheet of baking paper, cover with another sheet of baking paper and use a rolling pin to flatten the mixture to an even thickness of around 1/2 cm.
  4. Place into the refrigerator for 4-6 hours, or until hard.
  5. Cut into individual pieces to serve.
