Coconut Lime Thai Chicken

Ingredients: 

Chicken Marinade:
12 – 16 chicken pieces like thighs and drumsticks, skin on
grated zest from 2 limes
juice from 2 limes
2 – 3 tbsp fresh grated ginger
3 – 4 cloves of garlic, minced
2 tbsp packed brown sugar
1 tsp salt
1 can (13.5 oz) of coconut milk

Garnishes:
4 carrots, peeled and shredded
1 onion, thinly sliced
½ cup chopped peanuts
1 lime, cut in to small wedges
1 cup cilantro leaves
Hoisin sauce for dipping
cooked rice
