Coconut Rice Pudding

A family favourite treat.


1 cup organic brown rice, soaked minimum of 24-48 hours and rinsed

2 cups water

2 1/2 cups coconut milk

1/2 cup raisins

1 tbsp ground cinnamon

1tsp ground cloves

Stevia powder or palm sugar to sweeten (optional)

  1. Soak the rice 24-48 hours, changing water every day. Rinse well when done.
  2. Cook rice with rice steamer with the water
  3. Combine cooked rice, milk, raisins, sweetener, and spices and stir.
  4. Place in 300 oven for 20 minutes or until hot and raisins are plump. 
  5. Best served warm or refrigerate for later. 

To make with quinoa.

  1. Omit soaking. 
  2. Use cooked quinoa instead. 
  3. Duh.
  4. Yum!
