Compressed Melon with Blood Orange and Honey

  • Ripe Melon
  • Blood Orange
  • Honey
  • pinch of salt


  1. Using an apple corer, create sticks of melon.  Pat melon dry and seal in a vacuum sealer.  Place bag in the freezer overnight.  Remove and let the melon thaw in the refrigerator.
  2. Squeeze blood orange juice into a mixing bowl.  Whisk small amounts of honey into orange juice until orange juice is thickened.  Add a pinch of salt and whisk until disolved.
  3. Remove melon from bag.  Pat dry and plate.  Drizzle orange/honey syrup on plate.

Tips / Substitutes: Any melon will work with this recipe.  Try to avoid cutting sticks with melon seeds in them.

Servings: Two melon sticks per person.  One blood orange will make enough syrup for at least 4 servings.

Preparation Time:   15 minutes to prepare melon for freezing.  5 minutes to make syrup from blood orange and honey.  The melon requires overnight to freeze and most of the day to thaw in the refrigerator.
