3 ears fresh corn
3 to 4 tablespoons lime juice
2 tablespoons olive oil
1 tablespoon red wine vinegar
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 (15-ounce) cans black beans (drained and rinsed)
2 large tomatoes (seeded and chopped)
3 jalapeño peppers (seeded and chopped)
1 small red onion (chopped)
1/4 cup loosely packed fresh cilantro leaves
1 avocado (peeled, seeded, and chopped)
