Corned Beef & Cabbage

Not just for St. Patrick's Day!


1 pound baby carrots
1 small onion, cut into large pieces
1 pound small potatoes, quartered
1 corned beef brisket, plus pickling spice packet or 1 tablespoon pickling spice
1 small cabbage, cut into wedges



  1. Arrange carrots, onion and potatoes in bottom of slow cooker. Place corned beef, fat side up, on top and sprinkle with pickling spice; add enough water to almost cover meat (4-6 cups). Cover and cook until corned beef is tender (4 hours on high, 8 hours on low).
  2. Arrange cabbage over beef and continue cooking until cabbage is tender, 20 minutes.
  3. Thinly slice corned beef against the grain. Serve with vegetables and grainy mustard.
