Country-Style Ribs with Quick-Pickled Watermelon

Notes:

Savory meets sweet on Kahan's backyard grill. The chef builds flavor first with a soy-chili paste marinade for the country-style ribs, an unheralded cut that eats like a pork chop for up to $3 less per pound. He grills the ribs, then dunks them back into the marinade and gives them a final kiss on the grill for a boost of sweetness and char.
