Courgette and Almond Soup

1 tbsp olive oil
1 onion, thinly sliced
2 leeks, trimmed and thinly sliced
3 garlic cloves, finely chopped
6 courgettes (zucchini), cut into chunks
500ml (2 cups) warm vegetable stock
Salt and white pepper
50g (½ cup) blanched almonds
