Crabby Mac & Cheese

Ingredients: 

1 lb pasta, cooked & drained
8 Tbsp. butter
1 small shallot, diced
1 Tbsp. and 2 tsp Old Bay
3 cups milk
1 8 oz. package cream cheese
2 cups grated Manchega cheese
1 cup grated cheddar cheese
3 Tbsp. fresh parsley, chopped
2 Tbsp. cooking sherry (optional)
1 lb lump crab meat
1 cup bread crumbs


  1. Melt 4 Tbsp butter and saute shallots for 2 minutes, carfeul not to burn butter.  Whisk in flour, cook for 2-3 minutes, whisk in milk and add 1 Tbsp Old Bay.
  2. Add cream cheese until melted.
  3. Add grated cheese and 2 Tbsp parsley.
  4. After cheese melts, add sherry.
  5. Fold cooked pasta into cheese.
  6. Gently fold in crab meat (carfeul not to break lumps).  Pour into greased casserole dish.
  7. Melt remaining butter, add bread crumbs and remaining Old Bay and parsley.  Top casserole.  Bake at 325F until bubbly.
