Cranberry, Apricot & Pecan Wild Rice Pilaf

Ingredients: 

¾ cup pecans, chopped
1 tbsp extra virgin olive oil
1 heaping cup chopped sweet onion
2 garlic cloves, minced
1½ cups chopped celery + ½ cup, divided
1½ cups uncooked wild rice
2 cups vegetable broth (be sure to use gluten-free if required)
1½ cups water
1 bay leaf
¾ tsp kosher salt (or to taste) + black pepper as desired
½ cup dried cranberries
⅓ cup dried apricots, chopped
¼ cup golden raisins
½ cup fresh cranberries, thinly sliced
