creamy tomato curry with spinach & tofu paneer

Ingredients: 

1/4 cup raw cashews
1 pound bunch of organic spinach
6 tbsp canola oil
1 tbsp cumin seeds
1 tbsp black mustard seeds
1 tbsp sea salt
1/2 tsp turmeric
1/2 - 1 tsp cayenne pepper
1 28 oz can organic whole tomatoes, puréed
3/4 cup water
1 2/3 cup coconut milk {a little less than 1 can}
1 cup cubed firm or extra firm tofu
