Crockpot Vegetable Soup

Ingredients: 

1/2 med. head cabbage, chopped
1 med. zucchini, chopped
3 med. carrots, sliced
2-3 med. potatoes, chopped
1/2 cup onion, chopped
2 cloves garlic, chopped
1 (28 oz) canned tomatoes, undrained
1 can black beans, drained and rinsed
1 can red kidney beans, drained and rinsed
1 can whole kernal corn, drained
10 oz frozen chopped spinach
4 cups low sodium chicken broth
4 cups tomato juice
2 tsp dry basil
1 tsp dried oregano
1 tsp salt
1/4 tsp pepper
grated parmesan cheese


If desired, saute the onion and garlic in butter. 

Place all ingredients in crockpot. Cook 10-12 hours on low or 6-8 on high.
