Cucumber and Mint Salad

2 medium-size seedless cucumbers
1 teaspoon salt
1/3 cup creme fraiche or sour cream
2 tablespoons red wine vinegar
2 tablespoons fresh mint leaves
freshly ground black pepper to taste

1. Peel and slice the cucumbers as thinly as possible. Place the cucumber slices in a colander and sprinkle with the salt, tossing to distribute the salt. Let drain for 30 minutes. Spread the cucumbers on paper towels and press gently with additional paper towels to remove excess moisture.

2. Meanwhile, in a serving bowl, whisk together the creme fraiche, vinegar, mint, and pepper. Add the cucumbers, stirring to combine. Let stand for 15 minutes before serving.
