Cucumber Gazpacho with Shrimp and Melon

Modifications:

  • Used mango instead of melon
  • Greek yogurt instead of regular (had to add a splash of milk, too, to thin it out enough to blend)
  • Drizzled surface of soup with olive oil before serving
  • Went heavy on the shrimp and made this for two main courses (with bread) rather than four starters

nice tips! i want to try this with coconut milk & instead of yogurt...think it will work? I'm doing paleo diet this month
