Cucumber Watermelon Popsicles


1/2 English cucumber, peeled
1/3 cup simple syrup
1 small watermelon (about 1 lb.) peeled & chopped into 2 inch pieces
2 teaspoons fresh lime juice
Puree the cucumber with the simple syrup in a blender and/or food processor. Transfer the puree to a bowl with a measuring pitcher with a pouring spout.
