Curried Lentil Soup

Yield: ~4-5 cups

Ingredients: 

2 tablespoons olive oil, divided
1.5 cups chopped onion (approx 1 medium onion)
1 large carrot, chopped
2 large garlic cloves, finely chopped
1 celery stalk, chopped (optional)
1.5-2 tablespoons curry powder (I used Arvinda’s)
1 cup uncooked green lentils, rinsed and picked over
4 cups water
1 tablespoon fresh lemon juice
Kosher salt & black pepper, to taste (I think I used 1/2 tsp?)
2 green onions, thinly sliced
1 lemon, cut into 6 wedges
