Dad's Caramel Popcorn

Notes: 

(Almost) Instant Caramel Popcorn - fun to make with kids!

*Note - it is not recommended you place brown bags in the microwave so WATCH CLOSELY.

Ingredients: 

20 - 22 cups air popped popcorn
1/2 Cup Butter
1 Cup Brown Sugar
1/4 Cup Light Corn Syrup
1/2 Tsp Salt
1/2 Tsp Baking Soda
1 Tsp Vanilla


  1. Place air popped popcorn in a large brown paper bag.
  2. Melt butter in an 8-cup bowl.
  3. Add brown sugar, corn syrup and salt and mix.
  4. Microwave 1 - 2 minutes on full power until it bubbles.
  5. Stir then microwave an additional 3 minutes, stirring after each minute. Watch closely so it doesn't boil over.
  6. Add soda and vanilla, stir well, and pour in bag over caramel popcorn.
  7. Shake bag well, then fold down.
  8. Microwave bag 1 minute. Shake well.*
  9. Microwave bag 30 seconds. Shake well. Repeat 1x.*
  10. Tear open bag, spread out popcorn and let cool.*
