Ingredients:

18 eggs, free range, no antibiotics, no hormones, vegetarian feed (this changes the nutritional component of the eggs, as well as the taste!)
8 T Hellman's olive oil mayo or homemade mayo
2 tsp mustard powder
2 tsp raw apple cider vinegar
1/2 to 1 tsp tobasco or other gluten free hot sauce
1 tsp onion powder
1/2 tsp Himalayan sea salt
1/2 tsp cracked black peppercorn
sweet paprika to garnish

1. Place eggs in a large pot of cool water with plenty of salt. Bring water to a boil. Let water boil for 11 minutes. Remove from heater and let stand for 2 minutes.

2. Plunge the eggs in cold water. When eggs are cool enough, remove their shells and cut them in half lengthwise to remove the yolk. Place the yolks in blender.

3.  Add other ingredients and blend till smooth.  Put the mixture into a plastic baggie & cut the end off, then squeeze into the egg.

4. Sprinkle with paprika. Place on bed of lettuce and/or garnish with veggies, herbs, or other edible oddments. Cool before serving. Keeps 2 days when covered in the fridge.
