Dirty Rice


A standard in Cajun world. This uses the standard "Holy Trinity" flavor base. Usually made with Chicken Livers. We prefer smoked sausage or left over chicken maybe some shrimp, whatever you like if any meat at all.


1 cup white rice
2 cups chicken stock
2 cloves minced garlic
1/2 medium diced sweet onion
1/2 diced green bell pepper
1 stalks of celery
1 tablespoon butter
Salt and pepper
1/2 teaspoon dried thyme
1 bay leaf
1 teaspoon Tony Chachere's or other Cajun seasoning.
1/4 pound of a meat of your choice.
1 teaspoon tomato paste.

Slightly brown rice in 1 tbl of butter, Add chicken stock, bring to a boil then cover and lower to simmer for 10 minutes.

To make the holy trinity, in a saute pan with a splash of olive oil. Brown smoked sausage or simply warm your left meat of choice (if using shrimp add at the end). Saute garlic, onions and bell peppers in olive oil add salt, pepper, thyme, bay leaf and cayenne. Saute until soft abotut 10 minutes.

Whne the rice is about half way cooked (10 minutes). Add the "Holy Trinity" to the rice and still well. Cover, let the rice finish cooking, about 10 minutes more on low heat. Fluff before serving.
