Dirty Rice

A Louisiana staple, dirty rice is a hearty side dish that can stand up to the most full-flavored food. The classic is cooked with chicken liver as well, but it’s a bit (ahem) lighter with just seasoned pork sausage. I prefer Creole seasoning in place of the traditional Cajun, but feel free to adjust to the seasoning you prefer.

Makes 6 servings


1 1/2 cups long-grain rice
2 cups low sodium chicken broth
1 tablespoon olive oil
3/4 pound bulk pork sausage
1 cup chopped onion
2 celery stalks, chopped
1/2 cup chopped red bell pepper
1/2 cup chopped green bell pepper
1 tablespoon Creole seasoning
1/4 cup chopped fresh parsley
Salt and freshly ground black pepper, to taste
