Dukkah and chickpea crackers

For the dukkah

30g (1oz) almonds
30g (1oz) pistachios
4 tablespoons sesame seeds
2 tablespoons coriander seeds
2 tablespoons cumin seeds
1 teaspoon fennel seeds
1 teaspoon black pepper corns
2 teaspoons dried thyme
1 teaspoon sweet paprika
1 teaspoon good quality sea salt flakes
For the crackers

1 x 400g (14oz) can chickpeas, rinsed and drained
105g (3┬żoz) chickpea flour, plus a little extra if needed
1 teaspoon sea salt flakes
1 egg white
3 tablespoons dukkah, plus more for sprinkling
