Easy homemade stuffing

Altered to be vegetarian

Ingredients: 

1.5 lbs (1 lb 8 ounces, about 1 loaf) high-quality sandwich bread, cut into ½” cubes and dried (see step 1)
6 Tb butter
2 medium ribs celery, chopped fine
1 medium onion, minced
¼ cup minced fresh parsley
1 tsp dried sage
1 tsp dried thyme
½ tsp dried marjoram
1 tsp kosher salt
1 tsp ground black pepper
2½ cups veggie stock or low-sodium veggie broth
2 large eggs, beaten lightly
