Easy Indian Butter Chicken Recipe

1/4 butter (instead of 1 cup) and 1 can of evaporated skim milk (instead of cream). Turns out lighter but just as delicious. Also, you can sub coconut milk for evaporated.



1-1/3 cups butter, divided
1-1/4 onion, minced
1 tablespoon and 1 teaspoon minced garlic
1-1/4 (15 ounce) cans tomato sauce
4 cups heavy cream
2-3/4 teaspoons salt
1-1/4 teaspoons cayenne pepper
1-1/4 teaspoons garam masala

2 pounds skinless, boneless chicken breast, cut into bite-sized chunks
2 tablespoons and 2 teaspoons vegetable oil
2 tablespoons and 2 teaspoons tandoori masala
