1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon baking soda
2 cups nonfat buttermilk, (see Tip)
1 large egg, separated
1 tablespoon canola oil
1 tablespoon vanilla extract, (optional)
2 large egg whites
2 tablespoons sugar
