Egg-in-a-Hole

Ingredients

  • Butter
  • 2 fairly thin slices of whole wheat or multi-grain bread)
  • 2 eggs
  • Shredded or shaved cheese, preferably sharper/harder (pecorino/romano, asiago, parmesan)
  • Salt
  • Pepper

Directions

  1. Drop a bit of butter into a pan that's heated on low/medium
  2. While the pan heats up, cut a hole out of each slice of bread - you can use a small glass to guide you (just turn the glass upside down, center it on the slice of bread, push down so that it cuts through the bread and twist until a circular chunk of the bread is removed from the center of the slice)
  3. Put the slices of bread with holes in them in the pan and crack an egg into each hole (sunny side up!)
  4. Shake a touch of salt and pepper on each frying slice of bread/sunny side up egg
  5. When egg whites turn solid white and the yolk is still fairly runny, flip each slice of bread with the egg in the middle
  6. Sprinkle cheese on top of the egg-in-a-hole while it's finishing cooking
  7. Take egg-in-a-hole out of the pan - I like mine runny, so I only leave them in there for 1-1.5 mins. after I flip 'em!
