Egg Rolls


1 pkg egg roll wrappers about 18 in a pkg
1lb finely shredded cabbage (buy coleslaw mix for a quick cheat)
1 carrot finely shredded
1" grated fresh ginger
3 grated cloves garlic
4 spring onion finely minced
1 tablespoon soy sauce
1 tablespoon sesame oil
1/2-1 pound favorite meat (finely chopped char siu, shrimp, ground pork
1 egg * water to make a wash.

  1. Mix all ingredients except the egg wash together into a bowl including the meat. Mix well so all ingredients are evenly distributed.
  2. Layout wrappers in a diamond shape.
  3. Scoup 1/3-1/2 cup of mixture into the center.
  4. Brush egg wash on all the edges.
  5. Fold the the bottom point of the diamond tightly up over the filling and tuck and roll once.
  6. Fold left and right points into the center.
  7. Fold top part of diamond down tightly and you've created a classic egg roll.
  8. At this point you can freeze left overs for future use.
  9. Pan fry or deep fry for best results or you can oven fry for the healthiest option.
